Absenta, en la encantadora Place du Marché Saint-Honoré

The restaurant, under Michelin’s umbrella, is a creation of the Rostand family, restaurateurs for six generations. Michel Rostang, its starred chef, has actually coined the concept of “the great cook’s bistro”:

The business is run by Caroline, the Michel Rostang’s daughter, graduated from the Hotel School of Lausanne, who offers, as she says, “a simple, young and friendly cuisine.” Here, everyone loves their job, and all the dishes are, of course, “homemade”.

The challenge seems to be met successfully, since Absinthe is ranked 350 out of 13500 by customers on TripAdvisor. A great reference.

The setting is a warm mix of classic bistro style with touches of industrial style.

WHAT DO WE FIND ON THE MENU?

The starters go at €13, main courses at €24, and desserts at €11. The menu starter, main course and dessert all together would cost 45 euros.

You’d better take advantage, as the season compels, the green asparagus salad. A real treat, both for your eyes and your mouth.

The famous ” hot duck “, a club sandwich with grilled foie gras and Parmesan is another tasting ‘must-have’.

The interesting story behind the address is that the restaurant did not steal its name. Of course, absinthe is served here and it has the largest selection in the French capital with around fifty varieties offered at the end of the meal but also during the “green hour” its price is green, as well. As an accompaniment, they offer “crocks” or sardine pate, fresh bushmeat with black olives, pickled vegetables…

You may also visit the restaurant’s website, which offers some interesting recipes like beets gazpacho and fresh cheese. This recipe is delicious and can be served at the start of a meal this summer, when the weather is hot.
