The culinary team is led by Pierre Jay, a seasoned chef who has gained experience at renowned establishments like La Tour d’Argent and Chez Jean. L’Ardoise offers a seasonal menu with a daily special, providing a well-rounded selection of dishes. The menu is straightforward: 38€ for an entrée, a main course, and a dessert, with a variety of options:

The menu at L’Ardoise is both inventive and diverse. Some highlights include:

- Crispy snail cake with bacon and mushrooms – a well-executed dish featuring fresh products and a refined sauce.
- Moor duck foie gras cooked “au torchon” with cognac porto, served with quality sourdough bread.

- Free-range chicken with tarragon and mushroom risotto – the poultry is firm and flavorful, complemented by a generous sauce.
- Ox cheek fondant with aromatics and carrot mousseline – quality meat, well-cooked with a strong, balanced sauce.

- Chocolate entremet with caramel ice cream – a dessert that is fondant, crunchy, powerful, and harmonious in flavor.
To accompany these dishes, the Corbières Rozeta from Maxime Magnon, a 12-hectare organic vineyard, was selected. This wine is robust enough to complement the ox cheek while remaining delicate enough not to overpower the foie gras.
